Our Varietal Series seeks to express the individual grape varieties grown in the Negev, by emphasizing the character of each variety, alongside the unique characteristics of the desert terroir. The wines present high ‘drinkability’, without compromising complexity, and richness of tastes and aromas.
Our Yeruham Vineyard is located on Wadi ‘Shualim’ (foxes). This series displays the Common
Arab Fox – a social and intelligent animal, beautifully adapted to life in the desert.

In the Eye: Bright pink color, clean and crisp
On the Nose: Very rich Bouquet, with notes of fresh raspberry, grapefruit, lime, and a hint of citrus blossom. Followed shortly by hints of Lavender and spice.
On the Palate: A rich body and tight texture, all supported by a core of fresh and wonderful acidity.
With balance and relatively low alcohol content – it is pleasant and easy to drink, the perfect summer wine!

בעין: צבע אדום וחום בהיר מאוד וצלול.
באף: חגיגה של פירות אדומים עם פטל אדום ושחור וקסיס, עם נגיעות עדינות של שמרים, פלפל אנגלי ועשבי תיבול טריים.
בחיך: למרות שהוא בעל אופי קליל, היין עשיר מאוד עם חומציות נהדרת שמקנה לו מצד אחד רעננות ומצד שני מורכבות ועומק. הסיומת נפלאה ומשאירה טעם של עוד.
סופסוף יין אדום קליל! אך מורכב ומרגש. רצוי מאוד להגיש קר (10-12 מעלות) להדגשת האופי הפירותי והרענן שלו. יין אדום מושלם למנות קלות ומתוחכמות ולימות הקיץ החמים.

In the eye: Inky Dark purple, opaque and concentrated
The nose: Rich aromas of red fruit and blueberries, together with exotic spices and black pepper.
On the Palate: Very rich and fruity texture, soft tannins and a notable acidity makes for good balance.
The Malbec is among the best suited red varieties in the desert terroir. It is rich and fruity with balance and complexity. The notable spiced notes – the influence of the desert terroir – make it a gastronomic wine, which will evolve nicely in the glass.
It is recommended to open the bottle an hour before enjoying.

HOLOT is a series of regional blends, very carefully and meticulously crafted from the grape varieties we identified as best performers in the desert terroir, from the growing process in the vineyard – through the winemaking process. HOLOT RED 2021
55% Malbec, 19% Merlot, 16% Petit Verdot, 7% Cabernet Franc, 3% Cabernet Sauvignon.
Vineyards: Haruhot Vineyard, Mitzpe Ramon, Har Hanegev. Shezaf Vineyard, Mitzpe Ramon, Negev Mountains. Mevorach Vineyards, Omer, Ramat Negev.

Characteristics:
In the Eye: Dark and deep ruby, towards black
The Nose: Powerful and complex aromas of ripe black fruit, dried herbs and spices, coffee and dark chocolate.
On the Palate: Incredible body and richness, yet already balanced, tannins already very round. Great acidity and spice allow for a never-ending finish.
A blend of Bordeaux varieties, but featuring the desert’s strong varieties – mostly Malbec, Merlot and Petit Verdot. After diluting fruit on the vines, we received grapes of remarkable concentration and quality. The result is a ‘big’ wine, which will age beautifully for years to come, and develop complexity and character. The wine was aged for over 12 months in oak barrels. Gives us a glimpse on the potential for great reds from the desert.

באף: ארומות עוצמתיות ומורכבות של פרי שחור בשל עשבי תיבול יבשים ופלפל שחור, קפה ושוקולד מריר
בחיך: היין עמוק ועז, עם גוף מלא ומרשים. הטאנינים רכים ומשולבים היטב ומאוזנים. החמיצות הטובה והתיבול מקנים ליין סיומת בלתי נגמרת.
זהו למעשה ממסך של זנים בורדולזיים, אך כאן מבוסס על הזנים שגדלים באופן מיטבי בנגב – בעיקר מלבק, מרלו ופטי ורדו.
לאחר דילול הפרי בכרם, קיבלנו יבול נמוך מאוד אבל עם ריכוז יוצא דופן.
התוצאה היא יין “גדול” אשר ימשיך להתיישן היטב ויתפתח בבקבוק לעוד שנים רבות. היין התיישן במשך יותר שנה בחביות עץ אלון.
היין מראה מעט מהפוטנציאל שיש ליינות אדומים מורכבים ובעלי יכולת התיישנות מהמדבר.
HOLOT WHITE 2021
Composition: 86% Roussanne, 14% Chenin Blanc
Vineyards: Retamim Vineyard, Kibbutz Retamim, Ramat Negev, Shezaf Vineyard, Mitzpe Ramon, Har HaNegev.
Alcohol/Volume: 13.7%
In the Eye: Crisp yellow, with a touch of green.
The Nose: Very aromatic with a wide array of floral, tropical fruit and green tea aromas. Will keep developing in the glass and reveal fascinating yellow fruit and beautiful citrus notes.
On the Palate: A rich and fascinating wine, with notable minerality, full body and long, long finish.
The Roussanne was fermented and aged ‘sur lie’ in 100% new oak barrels, giving the wine great depth and body. The Chenin Blanc which contributed finesse and rounded its impressive structure. The result is a very special and unusual wine, which will age further and develop in the bottle.

הרוסאן הותסס כולו בחביות עץ אלון חדשות נבחרות, ויושן בהן ‘על השמרים (Sur Lie), מה שמעניק ליין עומק מורכבות וגוף.
אליו צורף שנין בלאן באיכות גבוהה אשר תרם עידון, ו’עיגל’ את המבנה המרשים של היין. התוצאה היא יין מיוחד מאוד ולא שגרתי, אשר ימשיך ויתפתח בבקבוק.
